For Lawrenceburg Fire Chief Johnnie Tremain, he goes by both.
Chief Tremain recently took first place in the Lawrenceburg Annual Smoke Off for his take on the Cuban Sandwich.
His dish, which he calls “El Jefe” features a Cubano bun, pulled pork, salmi, ham, swiss cheese, sweet and spicy pickles and locally sourced hot mustard.
For winning first place in the smoke off, Chief Tremain’s sandwich will be available for purchase at Proof 124 Table and Tavern until August 4.
